All enzymes are protein except ribozymes which are nucleic acids and behaves like enzyme. Enzymes also have primary, secondary and tertiary structures like proteins. Primary structure of an enzyme contain a simple chain of amino acids but secondary and tertiary form have more complex structure. Tertiary structure of enzyme contain many crevices or pockets that helps to hold the substrates by forming active sites(site of enzyme- substrates complex formation) . Thus enzymes catalyse the reactions at very high rates. Enzyme catalyse the reactions more efficiently at optimal conditions. Both below and above the optimal condition efficiency of enzymes decreases. Enzymes worked efficiently at low temperature but around 40°c and above enzymes are damage because at high temperature tertiary structure of protein degenerates. Though enzymes are efficient at low temperature, enzyme isolated from the organisms are normally live under extremely high temperature(80°c-90°c).





The rate of a physical or a chemical reaction refers to the total amount of product formed per unit time.
